Pasta born at 3,280 feet
Handcrafted in the shadow of the beautiful Dolomites mountain range in northeastern Italy.
Monograno Felicetti is a small, family-run workshop known world-wide for it’s superior artisan made pasta. In the picturesque mountain province of Trentino, master pasta-makers skillfully transform prized grain varieties into edible art, full fragrance and flavor. Monograno: the name in itself tells the story of its pasta. A single type of wheat, a single mill that grinds it into flour, and a single goal: the pursuit of quality, which means producing food that is delicious, healthy and safe. Monograno takes the wheat from the field to your table with minimal processing, preserving its distinctive natural qualities.
This pasta is made from Il Cappelli durum wheat that is ground fresh each morning for that day's production and combined with nearby pristine Dolomite mountain spring water for a singularly aromatic and flavorful pasta. Il Cappelli, a rare strain of durum wheat discovered at the turn of the last century by one of Italy's greatest scientists, and has a raw aroma of a sunny summer day in a hay meadow. Cooked, it exudes the fragrances of farm fresh milk and creamy mashed potatoes with a hint of roasted chestnuts. This pacote shaped pasta tastes of sweet buttery breadcrumbs with a final lovely note of sea salt. Toothsome and lively. This pasta is both organic and Kosher.
Pacote is a cylinder-shaped pasta works well with most sauces, especially heavier sauces such as bolognese and ragu.
