But, when the olives are harvested from trees grown in the nutrient-rich soil of Sabina, crushed the same day they are stored, and cold pressed to maintain the highest level of flavor, aroma, and nutritional value, then one can only deduce this is an oil of extreme freshness and elegance.
Balsamic Vinegar of Modena Dressing.
For this specialty we went to a place renowned for its culinary delights—the Manicardi farm in Castelvetro di Modena. The balsamic vinegar in this dressing is aged in small casks made of different woods like cherry or chestnut for 180 days, infusing it with unique flavor. The versatile essence of this dressing enhances the flavor of foods, both simple and complex. Drizzle on tomatoes and fresh mozzarella, use as a dip for crusty bread, or try it as a glaze on prime cuts of meat.
Artichoke & Summer Truffle Cream.
The unique taste of smashed artichoke hearts is paired with fresh summer black truffle, to create a refined and balanced smooth cream. Widely used as a sauce for pasta, risotto, meats and fish, this decadent treat is ideal as a dip for fries or roasted potatoes. Truffles cannot be cultivated, they are a natural treasure that can only be “found,” therefore they are a rare delicacy that can fetch quite a price. In fact, in 2016 a 4-pound white truffle sold at a Sotheby’s auction for $61,250. We have a more affordable way for you to enjoy these “diamonds of the kitchen.”
